- 3 eggs
- ½ cup self raising flour
- 1 cup Cheddar cheese
- 1 Tablespoon Oil
- 1¼ cups milk
- 1 finely chopped Onion
- 1 chopped rashers Bacon/Vege bacon
- Place all ingredients in a large bowl and stir
- Pour into a hot, greased dish, and add anything else you like, i.e. mushrooms, parsley, etc
- (It’s good as it is)
- Bake @ 180º for approx. 45 min
- Serves 4-6
This is my grandma’s recipe, she sent me a couple of easy, cheap recipes while I was studying and on a minuscule budget. The eggs might be a bit steep, but can be 4 meals (or two if you’re cooking for two of you, which I was - it made dinner and lunch for school the next day - it good straight out of the oven or cold). I usually had some lettuce and tomato plus whatever other salady things I could throw together with minimum effort to go with it.
You can easily take out the bacon, or replace with vege bacon for a vegetarian version :)
